Bred specifically to have an exceptionally sweet flavor and a smooth, dry textured flesh, Sunshine kabocha squash is known to be one of the sweetest on the market today. Its tender, bright orange flesh makes it excellent for baking, mashing, and pies.
The majority of winter squash found in NY is imported across the country and as far as California and Mexico, where labor costs are much lower. Cheap labor often equates to unfair pay wages, exposure to pesticides, unsafe living and working conditions, verbal abuse, and long hours. In addition, it's hard to find specialty varieties like sunshine kabocha.
