Inspired by her Great Aunt's mango chutney that she tasted in the beautiful city of Dehradun at the foothills of the Himalayas, Chitra returned to Brooklyn to make her own version. She decided to cut back on the sugar for this recipe by using ripe mangos and golden raisins. She added fresh ginger for heat, a little garam masala for warmth, and a touch of lemon juice for a nice sour note.
Pair with curry, cheese and crackers, fancy grilled cheese, grilled meats like pork. Also great as a glaze for a number of protein recipes or an ingredient to flavor a dressing.
Most mass-produced mango chutneys on the market are made with conventionally grown ingredients. Some use preservatives to extend shelf-stability, especially those that are imported from abroad. Many are loaded with GMO sugar and include modified corn starch and refined oils.
Brooklyn Delhi recipe highlights the flavor and natural sweetness of fruits along with aromatic spices (that are also very healthy!) They use locally-grown ingredients where possible, and all recipes are made by chef and cookbook author, Chitra Agrawal, who travels back to India each year to visit family and gain inspiration.
