T These ingredients are what cause most grocery store mozzarellas to be dry, rubbery, and more suitable to melting. Fresh mozzarella, handmade in smaller batches from whole milk, has a much softer, buttery texture and a delicate flavor. It's delicious served raw and eaten at room temperature.
