A great meal prep breakfast recipe, this baked oatmeal is full of warming spices and a welcome hint of maple. This combination of spices may remind you of a favorite cookie, but you can also choose to switch up the spices and fruit to match your personal taste preferences.
Ingredients
3 cups Local Roots rolled oats
¼ cup brown sugar
2 Tbsps. baking powder
1 tsp. salt
1 tsp. cinnamon
¼ tsp. nutmeg
¼ tsp. ginger
2 Tbsps. Local Roots maple syrup
2 cups Local Roots milk
2 Tbsps. Local Roots melted butter + 1 Tbsp. for greasing
Directions
1. Preheat oven to 350 degrees Fahrenheit. Grease a 9 x 9 pan with 1 Tbsp. butter.
2. Peel apples and the carrots. Cube apples into small chunks and shred carrots.
3. In a large bowl, mix together carrots, apples, oats, brown sugar, baking powder, salt, cinnamon, nutmeg, ginger, maple syrup, eggs, milk, and melted butter until combined.
4. Pour into greased baking dish and place in the oven. Bake for 60 minutes, or until the top is golden brown.
5. Allow to cool for at least 10 minutes, then slice into squares and serve. We recommend a drizzle of honey or maple syrup and fresh apples on the side.
