Cast iron fajitas by Jenn de la Vega

Have you ever gone to Chili's or Applebee's and heard the sizzle of a hot fajitas pan? Now you can make your own at home. All you need is a cast iron pan.

Cast Iron Fajitas

1 pack Acabonac Farm fajitas strips

1/4 red onion, sliced

1 clove garlic, minced

2 tablespoons soy sauce

1 tablespoon lemon juice

2 tablespoons vegetable oil

1 teaspoon Kosher salt

1/2 teaspoon pepper

4 to 6  small flour tortillas

Your favorite salsa or hot sauce

Optional: sliced bell pepper, cilantro, sour cream

1. In a plastic container or zipper bag, marinate the fajita strips with the garlic, soy sauce, lemon juice, salt, and pepper for at least 2 hours and up to overnight.

2. Preheat your oven as high as it will go. Make sure it is clean and there are no crumbs or splatters on the bottom or it will smoke. Open your windows and turn on your vents if that happens.

3. Place your cast iron pan into the oven and heat for 30 minutes.

4. Prepare your table or serving area with trivets or several layers of kitchen towels to prevent burns. 

5. Strain the marinade from the meat and reserve for another use.

6. Using tongs, add the fajita strips and onions to the hot pan and close the oven for 1 minute. 

7. Carefully remove the pan from the oven and place it on your table. Toss the meat around and let it sizzle to fully cook.

8. Serve the fajitas with flour tortillas and salsa.

Bonus tip: Save the marinade for gravy for potatoes, eggs or biscuits. Simply add a half cup of water to it, bring it to a boil. Whisk in a slurry made with 2 teaspoons cornstarch with 2 teaspoons cold water to thicken.
