1 cup quinoa
Add the quinoa to 2 cups boiling water and cook and cool. (Add some additional herbs like rosemary, thyme, or oregano if you want for an extra punch of flavor.)
While the quinoa is cooking, chop the scallion, cucumber and radishes into small cubes. Finely chop the parsley and add everything to a large bowl.
Add the quinoa to the veggies, squeeze the lime over everything, add a drizzle of olive oil if desired, and season to taste. Mix and adjust seasoning.
