This simple dinner comes together in less than 30 minutes, and it's super easy and fresh! Antibiotic-free ground lamb takes these lettuce wraps to the next level. So tasty!
1 pint cherry tomatoes, quartered
1 cucumber, quartered and thinly sliced
1 small red onion, sliced
4 ounces feta, crumbled
2 lemons, zested and juiced
Kosher salt, to taste
Freshly ground black pepper, to taste
1 cup full fat Greek yogurt
2 garlic cloves, grated
1 tablespoon chopped fresh mint
2 tablespoons extra-virgin olive oil
1 lb. ground lamb
1 tablespoon dried oregano
1 teaspoon ground cumin
1 head butter lettuce, washed and leaves separated
In a large bowl, combine tomatoes, cucumber, onion, feta, juice and zest of 1 lemon, salt and pepper. Mix to combine. Set aside.
In a small bowl, combine Greek yogurt, zest and juice of 1 lemon, garlic, mint, salt and pepper.
Heat oil in a medium skillet over medium high heat. Add ground lamb and use a rubber spatula to break down into small crumbles. Season with oregano, cumin, salt and pepper. Cook until fully browned, about 8 minutes.
Serve lettuce wraps immediately with lamb mixture, tomato-cucumber salad, and a dollop of yogurt mixture.
