This is a great way to use a whole head of cauliflower and makes for a stunning presentation. Serve at your next dinner party as an appetizer or side dish.
Ingredients
1 head of cauliflower
Salt
Pepper
Georgian spices
Olive oil
Garlic powder
For dressing:
3 tbsp of tahini
1 garlic clove, minced
1 lemon
2 tbsp of yogurt
Salt and pepper
Directions
1. Preheat the oven to 400 degrees.
2. Coat the cauliflower with oil then season with your desired amount of spices. Cover with foil and bake in an oven-safe baking dish for 1 hour.
3. While baking, make the tahini dressing. Whisk tahini, lemon juice, garlic and yogurt together. Season with salt and pepper to taste.
4. Spread the dressing down on the plate first, then sit roasted cauliflower on top. You can also serve the dressing in a small bowl on the side if preferred. Enjoy!
