Ingredients
Radishes with tops
A large handful (or 2 basil)
Walnuts
Olive oil
Lemon (1-2 based on taste)
Salt & pepper
Trim the tops of radishes and wash with the basil, set aside. Halve or quarter the radishes, toss with olive oil and sprinkle with salt and pepper in pop into a 350F oven for about 20 mins, or until softened. While they are roasting, combine the washed radish tops and basil in a food processor with a handful of walnuts, juice of a lemon, salt & pepper, and then blitz, while adding a slow stream of olive oil. Stop, and scrape down the sides and continue to blitz until you like the texture. Taste and adjust the lemon, salt & pepper based on your liking.
Serve by dolloping the pesto on the radishes or as a dipping sauce.
