Roasted Shishito Pepper Hummus
Ingredients
1 cup shishito peppers
1, 15 oz can chickpeas
Juice of 1 lemon + zest
2 tbsp olive oil
2 garlic cloves
3 tbsp tahini
1 tsp red pepper flakes (optional)
Salt & pepper
Instructions
Grill the gorgeous shishito peppers or roast them in a baking sheet with some avocado oil, salt and pepper until they are soft and charred.
While the shishito peppers are on the grill or roasting, drain and rinse the chickpeas. Add the chickpeas with all the other ingredients into a food processor and process until combined.
When the peppers are cooked, add them to the hummus mixture and process until super creamy.
Enjoy with fresh cut cucumbers, peppers or carrots or some crunchy corn chips!
