Zero Waste “Breakfast for Dinner”

Part of being zero waste means being prepared. For me, living in the city, running a business, and generally caring about the environment means that I need to have a plan. After a long day of work, I can’t always run into a bodega and pick up a single use package of “this or that”. I have to be prepared with a plan for how I’m going to get fresh, local, and delicious ingredients that will help me live my life in a way that aligns with my values - but also makes me a delicious meal. I am a huge fan of “breakfast for dinner”.
Quick, easy, and nothing tastes as good as doing the right thing feels.
Zero Waste “Breakfast for Dinner”
What you’ll need:
- Eggs
- Potatoes
- Scallions
- Lettuce
- Olive Oil
- Tomato
- Avocado
- Lemon
- Lime
- Flour
- Water
- Salt and Pepper
What you’ll do:
Potatoes:
- Coarsely chop potatoes and coat lightly with olive oil, salt and pepper
- In a skillet, add a splash of olive oil and heat over a medium heat. Add the potatoes and let get crispy brown! (Secret option: I LOVE using my air fryer!)
Tortillas:
- In a medium sized bowl, add 1 cup all-purpose flour, a pinch of salt, and enough water to create a smooth and elastic dough.
- Knead ingredients into dough and roll out approx 6 equally sized balls
- Use a well floured rolling pin to roll each dough ball out into a flat “tortilla”
- Pre-heat a skillet over medium/high heat. Place in and cook until bubbly and golden. Flip and do the same to the other side.
Lazy “Guac”:
- In a bowl, combine avocado, chopped tomato, chopped scallion, a squeeze of lime juice, and salt and pepper to taste
- Lightly smash all ingredients into a chunky “rustic” spread
Scallion Scrambled
- In a bowl, whisk together whole eggs, chopped scallions, salt, and pepper
- Place in olive oil coated skillet at medium/high heat and cook until light and fluffy, well done, wet...you know how you like your eggs!
Assemble Tortilla by adding some fresh lettuce, scrambled scallion eggs, a healthy scoop of rustic guac and a squeeze of fresh lemon or lime. Serve with crispy potatoes and enjoy an easy zero waste meal.
