Fennel & Cucumber Summer Salad

  • 2 white cucumbers, thinly sliced
  • 2 small fennel bulbs, thinly sliced
  • 1 sprig of fennel greens, chopped
  • 1 avocado, sliced
  • 1/2 cup fresh blueberries
  • salt and pepper for seasoning
  • 1/2 lemon juice
  • 1/4 cup avocado oil

In a large bowl, mix together cucumbers, fennel bulb, and blueberries. Season with salt, pepper, and lemon. 

Drizzle with avocado oil and top with sliced avocado and fresh blueberries.
